Dan Palecek is a 3rd generation cattleman from Idaho where he was at one time the President of the Far West Santa Gertrudis Association. His father and grandfather raised Santa Gertrudis before him. He left the Far West to move to New Mexico in 2000 to join a colleague in the Rocky Mountain Santa Gertrudis Association and grow his herd and agribusiness. Dan grew that operation almost 200% and operated their hay sales while developing a locally raised retail meat business in the local Rio Grande Valley.
It was during this time that his wife of now nearly 15 years had moved to the area to join the National Health Service Corps in delivering health care to the underserved rural communities of central New Mexico. They got married and had 2 beautiful daughters and by 2007 had an opportunity to move to East Texas with the then Trinity Clinic – now Christus Mother Francis Health Systems. With each of them being stakeholders in encouraging healthy choices in their community, when they moved to East Texas, Dan decided to continue to raise a variety of cattle right here on pastures in your local community to bring meat to your family’s table the way generations before us have. After seeing a very inflated organic meat market in the tourist towns of Santa Fe and Taos, Dan envisioned being able to bring high quality, clean meat to the average consumer for a reasonable cost. Dan raised and showed his first steer about 48 years ago in Idaho, so he brings a lifetime of experience and knowledge of the grading of animals for their reproductive ability, growth potential, marbling and tenderness.
